Pumpkin Protein Bagel with Sweet Cinnamon Cream Cheese

We are loving this adaptation from the Skinny Taste "2 ingredient bagel" recipe that has been floating around the internet ever since Trader Joe's came out with their "Everything but the Bagel" seasoning! It's finally FALL-- and that means its Pumpkin Season for all our #basic Fit Chicks! We all know that us girls love to incorporate pumpkin into anything and everything... so why not our bagels??While the recipe below is meant to be of a more "moderate" carb/protein style bagel-- the beauty of this recipe is that you can tailor it to your macros. Are you low carb or keto? Use more Carbquik baking mix, baking protein powder and/or ground up oats for oat flour instead of traditional flour! Don't have Carbquik in your pantry? NO PROBLEM!! Just sub the equal amount of Carbquik for traditional flour, or ground up oats (into flour texture). For reference, I buy Carbquik on Linda's Diet Delite's (it's cheaper than Amazon) and can be used for LOTS of recipes. Comes in handy for those on prep/poverty macros. The cream cheese is equally an MVP that can be used on more than just bagels! This sweet adaption can be used on toast, rice cakes, pancakes, you name it! It is also low in carb and fat so you don't have to feel any guilt enjoying this (even with adding in the cinnamon bun spread!!)

Pumpkin Bagel:

What You’ll Need:

Air Fryer or Oven

1 scoop Quest Multipurpose Baking Protein (Can also use Vanilla, Pumpkin Spice and/or unflavored)

85g CarbQuik Low Carb Baking Mix (if you omit this, just add 85g of regular flour)

120g Flour

170g Non-Fat Plain Greek Yogurt (strained) – I use Fage

¼ tsp Himalayan pink salt

1.5 tsp Baking Powder

2 tsp Pumpkin Pie Spice (or make your own with cinnamon, cloves, nutmeg and allspice)

2 Devotion Nutrition Pumpkin Pie Flex Flavors (or 1-2 tsp baking stevia)

120g Canned Pure Pumpkin

½ tsp Cinnamon

2 tbsp egg whites to use as a glaze before baking

2 tbsp extra flour for counter when rolling out dough

 Extra Options:

1 tsp Vanilla

1 tsp Brown Sugar Cinnamon Skinny Syrup

 

Directions:

In a bowl, mix together all dry ingredients. Once dry ingredients are equally blended, add in all wet ingredients (EXCEPT egg whites). If dough is too sticky, add flour, one tbsp at a time until it gets to a point where you can pull the dough out without it all sticking to you. It is OK if it sticks a little. Turn dough lightly on the floured surface. Knead and divide into 4 or 5 equal parts (depending on your macros). Roll each part into a ball, then flatten and create a hole in the center. Coat/Brush your bagel with the egg whitewash and put in the air fryer at 320 degrees for 10 min. Then flip the bagel over and bake for another 5-6 min. It will be a nice golden-brown color. If the bottom feels too soft, keep cooking for an additional minute or two, but turn the air fryer temp down.

**If using an oven, pre-heat it at 350 degrees and line a baking sheet with parchment paper and spray with non-stick spray. If baking all 4-5 bagels at the same time, you will increase the time to about 20-25 min.

Sweet Cinnamon Cream Cheese

What You’ll Need:

2 tbsp Cinnamon Bun Spread from Trader Joes (Could also use their Pumpkin Butter, Cookie Butter or Maple Butter)

¼ tsp Cinnamon

44g Greek Yogurt Whipped Cream Cheese (I use Green Mountain from Sprouts)

58g Fat Free Cream Cheese

1 tsp Brown Sugar Cinnamon Skinny Syrup

1 tsp Vanilla Paste from Trader Joes (or regular vanilla—just know that liquid vanilla will make the spread less firm)

Additional Option: 1 tsp Pumpkin Pie Spice

 

Directions:

Mix all ingredients together in a small container with lid. Once mixed thoroughly, put on lid and move to the fridge. Leave for 10-20 min so that the flavors mix together and the spread solidifies.
